Ember House was born from a simple conviction: that the oldest way of cooking is still the truest. Long before ovens and burners, there was fire — patient, honest, and unforgiving of shortcuts. We build every dish around it.
Our kitchen runs on oak and quebracho coals, tended by hand through the night. Cuts are selected weeks in advance, dry-aged in our cellar, and brought to the flame only when they're ready — never before.
This is not fast cooking. It is deliberate, generational, and a little stubborn — the way a good asado, a good roast, a good table has always been.
